Low FODMAP? Replace the spelt flour with Damhert cake mix.
Vegan? Replace the 3 eggs with 180 g applesauce.
Preparation method
Preheat the oven to 165°C (330°F).
In a bowl, mix the spelt flour, poppy seeds, and salt.
In another bowl, add the Creamy Cheese, Tagatesse, eggs, milk, juice of 1½ lemons, zest of 2 lemons, and the vanilla extract. Whisk until smooth.
Add the dry ingredients to the wet ingredients and mix until combined.
Pour the batter into a loaf pan and bake for 30 minutes.
In a small bowl, mix all the frosting ingredients until smooth. Let the cake cool completely before spreading the frosting on top.
