You might want to add something, or omit something: you can do all that with a Poke Bowl!
Prepare the rice according to the instructions on the packet.
Meanwhile, dice the red onion and tomatoes and avocado.
Chop the cucumber and mango. Also dice the vegan salmon.
Meanwhile, make the poke bowl sauce. Mix vegan mayonnaise with some lemon juice and chilli flakes (to your liking, if you like spicy food put in a lot of chilli flakes).
Divide the rice among four bowls.
Then divide the avocado, cucumber, mango, red onion, tomatoes, vegan salmon and lettuce among the four bowls of rice.
Finish with the sesame seeds and sauce.
