Slices of Bread of your choice (suggestion: Vitale or Classico bread)
Damhert Gouda or Cheddar Flavour
of cherry tomatoes
Fresh Basil Leaves
Pepper and Salt
Cut the courgette, onion and pepper into thin strips. Halve the cherry tomatoes. Then heat a grill pan over medium-high heat. Brush the slices of courgette, red pepper, onion and cherry tomatoes with olive oil. Sprinkle them with salt and pepper to taste.
Grill the vegetables in the preheated grill pan until tender and lightly browned, about 2-3 minutes on each side. Remove the grilled vegetables from the pan and set aside.
Place two slices of bread on a cutting board. Top the slices with fresh basil leaves. Divide the Gouda or Cheddar Flavour slices, grilled vegetables and halved cherry tomatoes evenly over the basil leaves. Place the remaining bread slices on top.
Heat a grill or grill pan over medium-high heat. If using a grill pan, press the sandwiches slightly with a spatula while they grill.
Place the sandwiches in the grill or grill pan and grill until the bread is crisp and the Gouda or Cheddar flavour is melted, about 3-4 minutes on each side. Remove the grilled sandwiches from the heat. Cut the sandwiches in half and serve immediately.
