Preparation method
Preheat the oven to 150 degrees.
Grate the carrots, not too finely.
Grate the zest of the orange.
Put the zest, walnuts, oil, cinnamon, sugar and eggs in a bowl. Beat this with the beaters for about 3 minutes.
Spoon the flour into the batter and mix it for a few minutes. As the dough gets solid here, use dough hooks now. Now add the grated carrots and mix.
Spoon the batter into a greased cake tin of your choice and bake the cake for about 1 hour in the middle of the oven.
Remove the cake from the mould and leave to cool for at least 1 hour before adding the topping.
Squeeze the orange. Mix the juice with the cream cheese and icing sugar in a bowl. Brush the cake with it and finish with some pieces of walnut!
